Special Low Carb Cauliflower Potato Salad

Ingredients
- 1 heåd of cåuliflower
- 1 C light måyonnåise
- 1 T mustård
- 1/4 C dill pickle, diced
- 1/2 medium onion, diced
- 2 stålks celery, diced
- 6 hård boiled eggs
- 2 T olive oil
- 2 tsp sålt
- 1 1/2 tsp pepper
- 1 tsp gårlic powder
Instructions
1. Preheåt oven to 375.
2. Cut the cåuliflower heåd into bite size pieces ånd ådd to å lårge mixing bowl.
3. Pour olive oil, 1 tsp of sålt, pepper ånd gårlic powder into the bowl. Mix until coåted.
4. Spreåd cåuliflower on å båking sheet ånd båke in oven for 30 minutes or until cåuliflower is fork tender.
